As a famous snack in Malipo County, Wenshan Prefecture, Yunnan, Youtanggao has a history of nearly 100 years. Youtanggao requires Guichao rice with high starch content as raw material. The rice is soaked for 12 hours, ground into rice paste, and fermented for more than 12 hours. Then pour the fermented rice paste into a basin, add appropriate amount of white sugar, eggs, and baking soda and mix evenly. When the copper bowl is heated, brush it with cooking oil, pour a spoonful of stirred rice paste, and fry it over medium heat until the surface turns light yellow. A delicious Youtanggao is ready.
