Shrimp is a traditional Dai delicacy. It is usually eaten with the traditional thin rice noodles of the Dai people. The raw shrimp meat paste is mixed with fennel, spicy millet, fragrant willow, Burmese coriander and other seasonings. Water boiled from Acanthopanax is added.
