Explore the feast of taste buds in Jiangchuan and try the local intangible cultural heritage delicacy - fish!  This dish uses crucian carp from Xingyun Lake or ecologically cultured fish, which is famous for its fresh and tender taste.  The unique feature is that it does not need to be fried, but is fried until golden and then simmered with seasonings such as Sichuan peppercorns and chili powder, thus retaining the original flavor of the fish.  In 2020, the fishing technique was rated as a district-level intangible cultural heritage project traditional technique in Jiangchuan District, Yuxi City. It is a dazzling business card of Jiangchuan fish food culture.
